Ingredients
- 3 Ibs baby potatoes
- 1 tbsp olive oil
- 2 tsp salt
- 2 tsp garlic powder
- 2 tsp smoked paprika
- 1 tsp chili flakes
- 1 tsp black pepper
- 2 Ibs lean ground beef
- 1 large diced onion
- 2 tsp salt
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp smoked paprika
- 1-2 tsp chili powder
- ½ tsp cayenne (optional)
- 250g 0% Greek yogurt
- 80g light mayo
- 60g ketchup
- 30g mustard
- 30-50g sriracha
- 1-2 tsp garlic powder
- salt to taste
- 1 cheese slice each
Instructions
- Preheat oven to 450°F.
- Cut baby potatoes into small pieces and toss them with olive oil, salt, garlic powder, smoked paprika, chili flakes, and black pepper.
- Bake the potatoes for 45 minutes, flipping them halfway through until they are crispy.
- In a pan over medium-high heat, cook the ground beef until browned, breaking it up as it cooks.
- Add the diced onion, salt, garlic powder, onion powder, smoked paprika, chili powder, and cayenne to the beef, and cook until the onion is tender.
- In a separate bowl, combine the Greek yogurt, light mayo, ketchup, mustard, sriracha, garlic powder, and salt to create the sauce.
- Assemble the bowls by layering the potatoes, then the beef mixture.
- Place one cheese slice on top of each bowl and broil for 1 to 2 minutes until melted.
- Top the bowls with the prepared sauce.
