  1. Preheat oven to 450°F.
  2. Cut baby potatoes into small pieces and toss them with olive oil, salt, garlic powder, smoked paprika, chili flakes, and black pepper.
  3. Bake the potatoes for 45 minutes, flipping them halfway through until they are crispy.
  4. In a pan over medium-high heat, cook the ground beef until browned, breaking it up as it cooks.
  5. Add the diced onion, salt, garlic powder, onion powder, smoked paprika, chili powder, and cayenne to the beef, and cook until the onion is tender.
  6. In a separate bowl, combine the Greek yogurt, light mayo, ketchup, mustard, sriracha, garlic powder, and salt to create the sauce.
  7. Assemble the bowls by layering the potatoes, then the beef mixture.
  8. Place one cheese slice on top of each bowl and broil for 1 to 2 minutes until melted.
  9. Top the bowls with the prepared sauce.
