Ingredients
- 2 lbs 96/4 Lean Ground Beef (906g raw)
- 1500g Sweet Potatoes (Raw, 3-4 large)
- 1 Large Onion (300g)
- 1 Bell Pepper (300g)
- 4 Tbsp Minced Garlic (30g)
- 80g Ketchup
- 20g Mustard
- 40g BBQ Sauce
- 50g Tomato Paste
- 15g Worcestershire Sauce
- 120g Low Sodium Beef Broth
- 30g Brown Sugar Substitute
- 1 Tbsp Garlic Powder
- 1 Tbsp Onion Powder
- 1 Tbsp Paprika
- 1 Tbsp Salt
- 2 tsp Black Pepper
- 2 Cups Reduced-Fat Cheddar Cheese (224g)
- Olive Oil Spray
Instructions
- Dice the sweet potatoes and air fry them at 400°F for 25 to 35 minutes, shaking the basket occasionally until they are crispy.
- Brown the ground beef in a skillet until it is halfway cooked, then add the diced onion and bell pepper and cook until the vegetables have softened.
- Add the garlic, tomato paste, Worcestershire sauce, ketchup, mustard, BBQ sauce, seasonings, sweetener, and beef broth to the skillet.
- Simmer the mixture for 10 to 15 minutes until the sauce has thickened.
- Assemble five bowls by layering the cooked sweet potatoes, the sloppy joe beef mixture, and the shredded cheddar cheese.
Store in the refrigerator for 4-5 days or freeze for longer storage. Reheat using a microwave or air fryer.
