Ingredients
- 2 lbs 96/4 Lean Ground Beef (907g)
- 1 Box Pasta Shells (16 oz / 454g)
- 1 Medium Yellow Onion, diced (150g)
- 1 Bell Pepper, diced (150g)
- 1 Packet of Taco Seasoning
- 1 Cup Cottage Cheese (224g)
- 4 oz Light Cream Cheese (113g)
- 1 Cup Reduced-Fat Cheddar Cheese, shredded (112g)
- 1 Cup Salsa (240g)
Instructions
- Boil the pasta according to the package instructions, reserving 1 cup of the pasta water before draining.
- Blend the cottage cheese until it reaches a smooth consistency.
- Sauté the ground beef, diced onion, and diced bell pepper in a pan until the beef is browned and the vegetables are soft.
- Mix the taco seasoning into the beef and vegetable mixture.
- Combine the cooked pasta, blended cottage cheese, cream cheese, shredded cheddar, and salsa with the beef mixture.
- Stir everything together until creamy, using small amounts of the reserved pasta water to adjust the consistency if necessary.
- Divide the mixture into 7 equal portions.
Each serving is approximately 2.25 cups. Can be stored in the refrigerator for up to 5 days or frozen. When reheating, add a splash of water to restore creaminess.
