Ingredients
- 8oz Turkey sausage
- 8oz lean beef (any lean ground meat works - chicken, Turkey, etc)

- 2 eggs
- 100g blended cottage cheese
- 5g nutritional yeast (adds cheesy flavor)
- 1tspn corn starch*

- 6 slices of low fat American or cheddar cheese
- 90g light Mayo
- 15g Gochujang
- 15g sriracha
- Small splash of white wine vinegar

Instructions
- Cook the turkey sausage and lean ground meat together, seasoning with salt, garlic, onion, smoked paprika, black pepper, and rubbed sage.
- Prepare the sheet pan eggs by mixing egg whites, eggs, blended cottage cheese, nutritional yeast, corn starch, salt, pepper, and garlic.
- Bake the egg mixture on a sheet pan until set.
- Combine the spicy mayo ingredients: light mayo, gochujang, sriracha, white wine vinegar, salt, and pepper.
- Assemble the sandwiches using the meat, sheet pan eggs, and cheese slices.
- To reheat from frozen: cover with a damp paper towel and microwave for approximately 1 minute. Split the sandwich in half to separate the egg and meat, then microwave uncovered for 45 seconds. Reassemble and air fry at 375°F or bake in the oven at 425°F for 5-7 minutes.
Corn starch is used in the eggs to prevent liquid loss during reheating. You can use only turkey sausage if preferred.
