Ingredients
- 2 onions
- 2 poblanos
- 2 bell peppers
- 16oz Hatch green chiles
- 8 Extra Lean Chicken Sausages
- 1 lb 93% beef or turkey
- 2 tsp coarse salt
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon rubbed sage
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon cumin
- 1 tablespoon maple syrup
- 12 eggs
- 400g egg whites
- 200g cheddar cheese
- Salt & pepper to taste
- Salt & pepper to taste
- 11 burrito tortillas
- 30g 0% greek yogurt per burrito
- Chopped cilantro
Instructions
- Prepare the pepper mixture by cooking the onions, poblanos, bell peppers, and Hatch green chiles until the water has evaporated and they begin to brown. Drain the mixture in a strainer to remove excess liquid.
- Make the lean ground breakfast sausage by mixing the beef or turkey with salt, garlic powder, chili powder, sage, Italian seasoning, cumin, and maple syrup.
- Prepare the cheesy eggs by mixing the eggs, egg whites, and cheddar cheese, seasoning with salt and pepper.
- Assemble the burritos by layering the pepper mixture, sausage, and cheesy eggs into the tortillas.
- To reheat from frozen, wrap in a paper towel and microwave for 2-3 minutes. For a crispier tortilla, air fry at 375°F for 6-8 minutes or pan fry.
To avoid soggy burritos, ensure all moisture is drained from the pepper mixture. For a sauce, mix hot sauce or enchilada sauce with Greek yogurt or sour cream. If omitting chicken sausage, double the ground sausage recipe.
