Ingredients
- 1.5 lbs 93/7 lean ground beef
- 1 small yellow onion, very finely diced
- 3–4 garlic cloves, minced
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp dried oregano
- Salt & pepper
- 1 tbsp tomato paste
- 2–3 tbsp low-sodium beef broth
- 1 tsp Worcestershire sauce
- 800g sweet potatoes, peeled & cubed
- Cooking spray
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & pepper to taste
- 1 cup nonfat Greek yogurt
- 1 tbsp light mayo
- 1/4 cup chopped fresh parsley
- 2 tbsp chopped fresh cilantro
- 1 garlic clove, grated
- Juice of 1/2 lime
- 1 tsp red wine vinegar
- 1/2 tsp dried oregano
- Salt & pepper to taste
- Splash of water to thin, if needed
- Sliced avocado
- Green onions
- Fresh parsley
Instructions
- Prepare the sweet potatoes by peeling and cubing them, then coating them with cooking spray, garlic powder, paprika, salt, and pepper.
- Cook the sweet potatoes until tender.
- In a pan, cook the ground beef with the diced onion and minced garlic.
- Season the beef with garlic powder, onion powder, smoked paprika, cumin, dried oregano, salt, and pepper.
- Stir in the tomato paste, beef broth, and Worcestershire sauce, and cook until the mixture is well combined.
- Make the sauce by mixing the Greek yogurt, light mayo, chopped parsley, chopped cilantro, grated garlic, lime juice, red wine vinegar, dried oregano, salt, and pepper. Add water if necessary to reach the desired consistency.
- Assemble the bowls by combining the beef and sweet potatoes, then top with the creamy herb sauce and optional toppings like avocado, green onions, and fresh parsley.
