Ingredients
- 2 lbs extra lean ground beef
- 2 lbs potatoes, diced
- 3 cups mixed veggies
- 1 medium onion, diced
- 150g 0% Greek yogurt
- 2 tbsp salsa
- 1 tsp mustard
- Onion powder
- Salt

- Sprinkle light shredded cheese (optional)
Instructions
- Roast the diced potatoes at 425°F for 25 to 35 minutes until they are crispy.
- Brown the ground beef in a pan, breaking it into pieces once seared.
- Add the diced onion and the seasoning blend (salt, pepper, garlic powder, onion powder, chili powder, and paprika) to the beef and cook.
- Sauté the mixed vegetables over high heat until they show slight charring.
- Combine the cooked beef, onions, vegetables, and potatoes in a bowl.
- Prepare the sauce by mixing the Greek yogurt, salsa, mustard, onion powder, and salt.
- Assemble the dish and drizzle the sauce over the top.
- Top with shredded cheese if desired.
