Ingredients
- 1.5 lb ground beef, browned and drained
- 1 small onion, diced
- 4 garlic cloves, minced
- 12 oz dry orzo
- 28 oz crushed tomatoes
- 3 cups beef broth
- 2 tsp dried oregano
- ½ cup kalamata olives, sliced
- 6 oz block feta
- Salt & pepper, to taste

Instructions
- Preheat the oven to 375°F.
- Place the dry orzo in a 9x13 baking dish and stir in the beef broth.
- Mix in the browned beef, diced onion, minced garlic, crushed tomatoes, oregano, sliced olives, salt, and pepper.
- Place the block of feta in the middle of the mixture.
- Cover the dish tightly with foil to prevent steam from escaping.
- Bake for 45 to 55 minutes until the orzo reaches a tender consistency.
- Remove from the oven and stir the ingredients together, breaking up the feta to incorporate it into the sauce.
- Allow the dish to rest for 5 to 10 minutes before serving.
The dish may appear too liquidy when first removed from the oven; the sauce will thicken as it rests and the orzo absorbs the liquid.
