Ingredients
- 2KG Peeled & Diced Potatoes (Carisma Potatoes)
- 500g Blended Low Fat Cottage Cheese
- 40g Freshly Grated Parmesan Cheese
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1/2 Tsp Black Pepper
- 1 Tsp Salt
- 800g Extra Lean Diced Beef
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1/2 Tsp Black Pepper
- 1 Tsp Salt
- 20g Light Butter (Nuttelex Light)
- 5 Diced Garlic Cloves
- Fresh Parsley
- 300ml Fat Free Evaporated Milk
- 1 Tsp Chicken Stock Powder
- 1.5 Tsp Smoked Paprika
- 60g Light Cream Cheese
Instructions
- Boil the diced potatoes in a large pot of water until tender, then drain.
- Mash the potatoes with the blended cottage cheese, parmesan, garlic powder, onion powder, black pepper, and salt until smooth.
- In a separate bowl, coat the diced beef with garlic powder, onion powder, black pepper, and salt.
- Heat oil in a large pan over medium-high heat and cook the beef for about 2 minutes on each side.
- Add the butter, diced garlic, and parsley to the pan, stirring until the butter melts and the beef is coated, then remove the beef from the pan.
- In the same pan, combine the evaporated milk, chicken stock powder, and smoked paprika, scraping the bottom of the pan to incorporate the flavors.
- Stir in the cream cheese until the sauce is smooth.
- Portion the mashed potatoes and steak into six containers and top with the creamy sauce.
Store in the fridge for up to 4 days or freeze for up to 3 months. To reheat, air fry the steak at 190°C (375°F) for 3-4 minutes and microwave the potatoes separately; add a splash of milk to the potatoes if they are too dry.
