Ingredients
- 900g diced potatoes (raw weight, Coles Carisma potatoes used - around 25% lower carb than standard potatoes, can swap for spud lite or regular potatoes)
- 1 tsp olive oil
- 900g extra lean diced beef (Woolworths Heart Smart or any lean cut beef)
- 5 garlic cloves, finely chopped
- 20g light butter (Nuttelex Light)
- 1 tsp salt
- 1 tsp garlic powder
- 2 tsp onion powder
- 1 tsp black pepper
- 1 tsp dried parsley (potatoes only)
- 2 tsp smoked paprika (potatoes only)
- 300ml fat free evaporated milk (Carnation Light & Creamy or low fat milk)
- 20g freshly grated parmesan
- 1 tsp dried oregano
- 150ml beef stock
- 75g light cream cheese (or light Laughing Cow wedges)
- 1 tsp smoked paprika
- 2 tsp chicken stock powder (low sodium)
Instructions
- Season the diced potatoes with olive oil, salt, garlic powder, onion powder, black pepper, dried parsley, and smoked paprika.
- Season the diced beef with salt, garlic powder, onion powder, and black pepper.
- Cook the potatoes in an air fryer at 200°C (400°F) for 20-25 minutes or in an oven at 200°C (400°F) for 25-30 minutes, flipping halfway through.
- Prepare the sauce by combining the evaporated milk, grated parmesan, dried oregano, beef stock, light cream cheese, smoked paprika, and chicken stock powder.
- Cook the beef bites in a pan with the light butter and chopped garlic.
- Combine the cooked beef and potatoes with the prepared creamy garlic sauce.
