Ingredients
- 1½ lbs boneless skinless chicken breasts, cubed
- 2 tbsp olive oil
- 1 tsp Cajun seasoning
- ½ tsp paprika
- Salt & black pepper
- Salt & black pepper
- 1 lb spaghetti
- 4 tbsp butter, divided
- 4 garlic cloves, minced
- 2 cups heavy cream
- 1 cup chicken broth
- 1 cup shredded mozzarella
- ½ cup grated Parmesan
- 2 tbsp cornstarch
- 2 tbsp cold water
- Fresh parsley
- Extra Parmesan
Instructions
- Boil the spaghetti until al dente. Before draining, reserve 1/2 cup of the pasta water.
- Mix the chicken with Cajun seasoning, paprika, salt, and pepper. Cook the chicken in olive oil and butter until it is golden brown and fully cooked.
- In the same skillet, melt the remaining butter and sauté the minced garlic for 30 seconds.
- Pour in the heavy cream and chicken broth, then let the mixture simmer.
- Combine the cornstarch and cold water in a small container, whisk, and stir into the simmering sauce until it reaches a thicker consistency.
- Stir in the mozzarella and Parmesan cheese until the cheeses have melted.
- Add the cooked chicken and spaghetti back into the skillet, tossing everything together to coat thoroughly.
- Top with fresh parsley and additional Parmesan before serving.
You can use the reserved pasta water to thin the sauce if necessary. Variations include adding spinach, mushrooms, or swapping chicken for shrimp.
