- 227g (8oz) Monterrey jack
- 250g (1 cup) pico de gallo
- Handful of cilantro
- Salt to taste
- 14 burrito sized tortillas
Instructions
- Roast the poblanos and yellow onions.
- Season the chicken breast with salt, pepper, and garlic powder.
- Heat olive oil in a pan and sear the chicken in batches until cooked through.
- In a bowl, combine the tzatziki, Greek yogurt, Monterrey jack, pico de gallo, cilantro, and salt to create the filling.
- Lay out a tortilla, add the chicken and the prepared filling, then roll into a burrito.
- To ensure even distribution, weigh the total filling batch and divide by 14 to determine the amount per burrito.
- Optional: Sear the assembled burritos in a pan for 1-2 minutes per side to brown the tortilla.
- To reheat from frozen: Microwave for 2-3 minutes until softened, then sear in a pan over medium-high heat for 2-4 minutes per side until golden and cooked through.
