Ingredients
- 240ml orange juice
- 120ml soy sauce
- Juice of 3 limes
- 16 cloves garlic
- 1 tbsp cumin
- 1 tbsp salt
- 2 tspn black pepper
- 2 tspn onion
- 3 dried ancho chiles*
- 6 dried guajillo peppers*
- 1, 7.5oz can chipotle’s in adobo
- 40g honey or agave
- 25g avocado oil
- 1 bunch Cilantro
- 4 pounds flank steak
- 300g Pasta (dry weight)
- 275g Cottage cheese
- 30g Cheddar powder
- 120g 2% cheddar
- 120g fat free cheddar
- 240ml milk
- Salt & pepper to taste
- 5 tablespoons of marinade
- 200g low fat greek yogurt
- 30ml milk or until desired consistency
- 14 burrito tortillas
Instructions
- Prepare the dried chiles by removing stems and seeds, then microwave them covered with a moist paper towel for 20-30 seconds to toast.
- Make the marinade by combining the orange juice, soy sauce, lime juice, garlic, cumin, salt, black pepper, onion powder, toasted chiles, chipotles in adobo, honey/agave, avocado oil, and cilantro.
- Season the flank steak generously with salt on both sides. Marinate the steak using 50-75% of the prepared marinade, reserving the remaining marinade for later use.
- Cook the steak on a grill. For medium-rare, aim for an internal temperature of approximately 120°F, then let the meat rest for 10 minutes.
- Prepare the mac n' cheese by cooking the pasta according to package directions. For the sauce, blend the cottage cheese, cheddar powder, 2% cheddar, fat-free cheddar, and milk until smooth. Season with salt and pepper, then combine with the cooked pasta.
- Prepare the creamy carne asada sauce by mixing 5 tablespoons of the reserved marinade with the Greek yogurt and milk (adjust milk for desired consistency).
- Assemble the burritos by filling the tortillas with the mac n' cheese, cooked steak, and the creamy sauce.
- To reheat from frozen: wrap in a paper towel and microwave for 2-3 minutes. To crisp the exterior, air fry at 375°F for 6-8 minutes or pan fry in oil for 4-5 minutes per side.
The reserved marinade can also be used as a salsa or dip. For the steak, use only enough marinade to cover the meat to ensure enough is left over for the sauce and for topping the finished steak.
