Ingredients
- 3 lbs 96/4 lean ground beef
- 500g cooked jasmine rice
- 300g frozen peas and carrots blend
- 3 large eggs
- 100g low sodium soy sauce
- 50g hot honey
- 40g minced garlic
- 1 tbsp chili crisp oil
- Salt and pepper
- Salt and pepper
- Pineapple teriyaki seasoning to taste
- 100g plain nonfat Greek yogurt
- 80g light mayo
- 30g sugar free BBQ sauce
- Chili paste to taste
- Hot honey to taste
Instructions
- Brown the ground beef in a large skillet, seasoning it with salt, pepper, and pineapple teriyaki seasoning. Add the soy sauce and hot honey, breaking the meat apart as it cooks.
- Incorporate the frozen peas and carrots into the skillet and cook until heated through.
- Add the cooked jasmine rice and the eggs to the skillet, stirring to combine all ingredients.
- Add the chili crisp oil, additional soy sauce, and additional hot honey. Continue cooking and stirring until the rice achieves a crispy texture.
- Prepare the sauce by mixing the light mayo, sugar-free BBQ sauce, Greek yogurt, chili paste, and hot honey in a bowl until the mixture is smooth.
- Divide the fried rice into seven containers and top each portion with the prepared sauce.
Using day-old rice helps achieve a better crispy texture.
