Ingredients
- 32 oz 96/4 lean ground beef
- 950g cooked jasmine rice
- 300g frozen peas and carrots
- 4 large eggs
- 60g low sodium soy sauce
- 100g plain nonfat Greek yogurt
- 100g light mayo
- 30ml Frank’s Sweet Chili Sauce
- 10g sriracha
- Brown sugar seasoning (used in the video)
Instructions
- Heat a skillet over high heat.
- Add the ground beef and season heavily with brown sugar seasoning. Pour in 20-30g of the soy sauce and cook until the beef is browned.
- Stir in the frozen peas and carrots and cook until they have softened.
- Add the cooked jasmine rice, the rest of the soy sauce, and the eggs to the skillet. Mix well and cook until the rice becomes crispy.
- Combine the Greek yogurt, light mayo, sriracha, and sweet chili sauce in a bowl and whisk until smooth to create the sauce.
- Portion the fried rice into six containers and top with the sauce or serve it on the side.
To reheat from the fridge, microwave for 1.5 to 2.5 minutes. To reheat from the freezer, microwave for approximately 5 minutes and then add more time as necessary.
